Grouper and scallops, seasoned with cayenne and black pepper, over that overworked rice. The grouper came out kinda rubbery, I wasn't impressed. I made another batch of rice with just water from steamed greens, it came out much better.

I revisited this recipe this evening, without the scallops, simmered in a pan with a covering of frozen greens for about 15 minutes. It came out much more tender and tasty, so I'm guessing I overheated it last time. A little white wine in the pan would have been a great touch too.
